Vegetable Tagine with Spicy Broth

All the wonderful flavours and aromas of a Moroccan spice market.
Ingredients:
- 7 vegetables of choice
- 3 cups flavoursome stock
- 500g couscous
- 2 tablespoons butter
- 1 medium sized onion, chopped
- 5 tablespoons vegetable oil
- 2 cups water
- 400g can chopped tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger Harissa or other chilli paste toasted almonds and olives to garnish
Method:
- Trim and prepare the vegetables and then steam or poach in the stock until tender. Drain well and pour stock over couscous. Rest 5 minutes then add butter and peas or beans if using. In a pan fry onion in oil until soft. Add tomatoes including juice, water, spices and enough harissa to make a spicy broth. Cover and simmer 10 minutes. Pile cous cous into a mound: surround with vegetables and garnish with almonds and olives. Pour tomato broth over the couscous just before eating
