Description:

Layers of the best of winter fruits with a juicy syrup.

Ingredients:

 

  • 250g grapes
  • 250g pineapple
  • 1 orange
  • 1 mandarin
  • 1 sprig mint
  • 1/2 cup sugar
  • 1/2 cup water

Method:

 

  1. Place sugar and water in saucepan and bring to the boil, stirring occasional ( you can add a splash of brandy or sambuca if you desire)
  2. Simmer until all sugar is dissolved and liquid starts to thicken, remove from heat and chill
  3. Pick and wash grapes
  4. Peel pineapple, remove core and dice flesh into 2cm dice
  5. Peel and segment orange removing all seeds and pith
  6. Peel and segment mandarin removing all seeds and pith
  7. Wash, pick and shred mint
  8. Place fruit and mint in serving bowl or glass and pour over sugar syrup
