Description:
Layers of the best of winter fruits with a juicy syrup.
Ingredients:
- 250g grapes
- 250g pineapple
- 1 orange
- 1 mandarin
- 1 sprig mint
- 1/2 cup sugar
- 1/2 cup water
Method:
- Place sugar and water in saucepan and bring to the boil, stirring occasional ( you can add a splash of brandy or sambuca if you desire)
- Simmer until all sugar is dissolved and liquid starts to thicken, remove from heat and chill
- Pick and wash grapes
- Peel pineapple, remove core and dice flesh into 2cm dice
- Peel and segment orange removing all seeds and pith
- Peel and segment mandarin removing all seeds and pith
- Wash, pick and shred mint
- Place fruit and mint in serving bowl or glass and pour over sugar syrup
