Zucchini Burgers

Description:

Herbed zucchini burgers are ideal for a quick snack or as a meal with salad.

Ingredients:

 

  • 500g zucchini, trimmed
  • salt and freshly ground pepper
  • 1 1/2 cups fresh wholemeal breadcrumbs
  • 6 spring onions, finely sliced
  • 2 organic eggs, lightly beaten
  • 2 tablespoons chopped mint
  • 3 tablespoons chopped parsley
  • 1 teaspoon grated nutmeg
  • Olive oil for frying
  • 1 cup Greek style yoghurt
  • 2 tablespoons finely chopped dill

Method:

 

  1. Coarsely grate zucchini and sprinkle generously with salt. Leave in a colander for 30 minutes. Rinse the zucchini and press to remove as much liquid as possible. Pat as dry as possible with kitchen paper. Put into a bowl and add breadcrumbs spring onions, eggs, mint, parsley, nutmeg and salt and pepper.
  2. Form mixture into 18 plump burger patties. Heat a pan over a medium-high heat and add enough olive oil to prevent sticking. Cook the patties until crisp and golden – about 4 minutes each side.
  3. Drain on kitchen paper. Beat the yoghurt until smooth, and stir in the dill.
  4. Serve with the hot burgers.
