Zucchini Burgers

Description:
Herbed zucchini burgers are ideal for a quick snack or as a meal with salad.
Ingredients:
- 500g zucchini, trimmed
- salt and freshly ground pepper
- 1 1/2 cups fresh wholemeal breadcrumbs
- 6 spring onions, finely sliced
- 2 organic eggs, lightly beaten
- 2 tablespoons chopped mint
- 3 tablespoons chopped parsley
- 1 teaspoon grated nutmeg
- Olive oil for frying
- 1 cup Greek style yoghurt
- 2 tablespoons finely chopped dill
Method:
- Coarsely grate zucchini and sprinkle generously with salt. Leave in a colander for 30 minutes. Rinse the zucchini and press to remove as much liquid as possible. Pat as dry as possible with kitchen paper. Put into a bowl and add breadcrumbs spring onions, eggs, mint, parsley, nutmeg and salt and pepper.
- Form mixture into 18 plump burger patties. Heat a pan over a medium-high heat and add enough olive oil to prevent sticking. Cook the patties until crisp and golden – about 4 minutes each side.
- Drain on kitchen paper. Beat the yoghurt until smooth, and stir in the dill.
- Serve with the hot burgers.
